The History of in10se bbq |

in10se (pronounced intense) seemed like an appropriate name for our team I guess my obsession with bbq kicked into high gear about 3 years ago when I was looking for information on building a trailer mounted offset wood burning smoker. Through the power of google I stumbled on a site called The BBQ Forum. This is a place where people go every day to discuss all things bbq. From how to smoke the perfect thanksgiving turkey to competition strategy & judging discussions it is all there. With the knowledge and advice from fellow bbq enthusiasts we got the pit completed just before Christmas 2004. It was broken in with a holiday party consisting of pulled pork, beef brisket & 20 lbs of wings. In the spring of 2005 we took a certified judging class and joined the KCBS (Kansas City BBQ Society) hoping one day to compete in a cook off. Later in 2005 we judged at the Smoke on the Water cook off in Bristol Pa. March 2006 took us to Rockingham Nc. to judge at the 1st annual Smoke at the Rock cook off. In August we went to Belair where I Judged & Robin learned some of the finer points of presentation from our good friend John & the Pennsylvania Posse BBQ Team. September found us in our home town of Frederick helping Judge the Trinity Schools BBQ Contest. In October we joined many fine bbq folks at Walter Reed Hospital to do lunch for some of our Troops. That was truly a day that Robin & I will remember for a long time to come. Through out the year we helped out family & friends with picnics, party's & even a rehearsal dinner. 2007 was the year we started competion entering 4 contests (pork in the Park, Beltway bbq Battle, Stevensville and Pickin in the Panhandle) and getting a call in 3 of them. we also went back to Walter Reed Hospital in august along with others to feed over 500 recovering soldiers and their families. we added a 20 x 30 party tent, 8 tables and 60 chairs to the equiptmtnt list along with a large box truck to haul it all. in 2008 we weren't able to enter any contests but it was a busy year for catering and vending. we cooked pulled pork, hot dogs, sausage & baked beans for recoveing soldiers and their familys at whites ferry in poolesville md. sold food at marinatha churche's family picnic and fireworks. made 3 trips to brunswick md for a comunity yard sale, railroad days and a car show. in between all that were numerous private partys and corporate events. we also purchased a large commercial deep fryer to do french fries. the cooker got a warming chamber added to the top of the fire box. October 10th found us at kookers Kare Mid Atlantic helping to cook 1200 lb of pork all to be donated to the national capitol area food bank. at the end of the day we had 680lb of pulled pork bbq packed in 2lb containers.
